Which is to say, I think this bread recipe is pretty much cracked.

The only problem is that half a loaf disappears pretty much immediately.

My mother claims it's a traditional superstition that eating bread before it's cooled brings bad luck. I firmly believe this is propagated by bakers that want some of their bread to last after it's cooled.

Funnily enough, the first book in which I read this recipe was written by a professional baker who also promulgates this view.

Letting it cool a bit, and then starting in on it does seem to leave the rest of the loaf a little better. I think we have a compromise here: let it cool till Heroes is finished seems to work quite well.

(The loaves hit the oven, then we start watching Heroes. When the bell goes, we pause the program.)

What I typically do is make half-sized loaves, leaving one to consume straight from the oven without guilt over what's happening to the rest of the loaf as it cools.

I'm making enough for two loaves, each about two pounds. It's not quite the same compromise - perhaps I should do three smaller ones, and accept that the first one is doomed.

I'd say that half a loaf is better than none, but I don't feel that it actually adds anything to the discussion. I will, however, admire your self control in leaving half a loaf unscoffed and posit the suggestion of baking a bigger loaf, to leave - say - two thirds to cool.

Actually, I'm baking two loaves, so it's not a huge problem: 1/4 of what I bake disappears, the rest lasts a bit longer.
